Corn Beef Casserole (Compliments of Evelyn Fullbeck)
1 bag Shredded Frozen Potatoes
1 lb Corn Beef (chopped in food processor)
1 lb jar thousand island dressing
2 cans Bavarian Saukerkraut (rinse & squeezed dry)
2 cups Shredded Swiss Cheese
Place potatoes in 9x13 inch greased pan. Salt and pepper and put in oven for 20 minutes at 400 degrees. Cover potatoes with corn beef and top with thousand island salad dressing. Top with sauerkraut and swiss cheese. Heat in oven 20-30 minutes.
